During prolonged heat treatment, vitamins are destroyed. Vitamin C, for example, is destroyed by prolonged heat treatment and acid content in prepared foods. If you reduce the cooking time, the proteins of the food will not be completely boiled, which will not allow the proteins to be fully absorbed during the digestion process. The same thing happens with many useful substances, which are precisely necessary for the normal functioning of the human body.

But the double boiler can be easily replaced with an ordinary saucepan with a lid, into which a colander of the same diameter is inserted. A small number of steam cutlets can be cooked in such a device in just 20-30 minutes.

Cooking food in the microwave. All products contain water. When cooking food in a microwave, a sharp vibration of water molecules occurs due to microwaves, energy is generated, which leads to a change in the structure of fiber and proteins, the food becomes soft and available for consumption.

Also note that a small amount of fat, or even no fat at all, can be achieved by frying in a Teflon pan. It is very comfortable. But keep in mind that if the surface of a Teflon frying pan is scratched, carcinogenic substances are released when heated. Therefore, throw away such pans without regret. Or use ceramic pans.

Never reuse oil or fat for frying as it creates toxins and carcinogens. Best for frying large quantities of cutlets, pies, pasties, etc. use ghee. It alone does not form harmful substances when used for a long time. If there is no melted butter, then it is better to fry it once and only once.
