However, it is worth noting that this is rather a tribute to the contribution that producers made to the development of the country’s economy, so the production of the drink was taken under state control.

Champagne or sparkling wine?

Quite often this product is called champagne, but in fact this is not entirely true. And the point here is not only in the legislative restriction, according to the terms of which only drinks made in the region of the same name in France can be considered champagne, there are other differences:

  • By grape variety– Muscat is not used to make French champagne, but it is ideal for light Asti, which has a characteristic, bright honey-floral aroma.
  • According to manufacturing technology– unlike champagne (otherwise classical) technology, secondary fermentation (due to which bubbles arise) occurs in enameled or steel vats, and not in bottles. This technique is called in Italy Metodo Charmat-Martinotti - in honor of their inventors, or simply the Charm method. It is much simpler and more economical than the classical method, but due to a number of features it is unsuitable for making complex sparkling wine. Very often, in the process of making Martini Asti champagne, a slightly improved Charmat technology is used.
  • By degree of sweetness– Asti is a sweet and sparkling wine, it is not for nothing that it is made from the Muscat variety. Champagne is valued for completely different characteristics of taste and aroma, generated by Pinot Noir and Chardonnay varieties, which are grown on the limestone soils of the Champagne region. Therefore, the latter is almost always dry or very dry sparkling wine.
  • By cost– Martini Asti sparkling wine is a more economical pleasure than natural French champagne. But the popularity of the drink has significantly increased its cost, so this type of alcohol is often sold at higher prices. This is especially applicable to brands such as Asti Cinzano, Asti Martini and Asti Mondoro.

Where is Martini Asti made?

Martini Asti is produced in Piedmont. The Asti wine family has unsurpassed taste and aroma. To produce Asti Martini, it is made from white nutmeg, harvested at its optimum ripeness. This wine has been awarded the highest category of Italian wines. Asti Martini has been produced since 1863.

Of course, for the older generation, the price of this wine seems overpriced, especially in comparison with budget options for domestic sparkling wines. Strictly speaking, no other wine can be considered champagne except those produced in the French province of Champagne. However, this does not mean that all wines are made according to the same recipe, especially since Martini champagne has maintained its reputation for more than two centuries.

Since the 14th century, sweet wine made from white grapes has become highly prized in the eastern Mediterranean. Through Venice it came to Italy. In the republic, the drink was called “Greek wine”.

Giovan Battista Croce moved to Piedmont at the end of the 16th century. How is wine made?

The technology for producing this wine was developed back in the 18th century by a winemaker named Giovanni Croce, who lived in the Piedmont region of Italy. Until then, the production of sparkling wine was based on a mandatory classical recipe, which included a standard fermentation process.

Giovanni changed this technology somewhat, coming up with a technology that allows the natural sweetness of the wine to be preserved, which at that time was a very unusual step for fans of sparkling wine.

The resulting drink as a result of such experiments not only had a light aroma of flowers, fruits and honey, but also retained the airiness of small bubbles of carbon dioxide, which created a completely new taste, and was instantly appreciated by noble families. By the 19th century, this wine was already known not only within Piedmont.

In addition, sparkling wine “Asti” today differs from classic champagne in that Muscat grape varieties are not suitable for French champagne production technology. But for a sunny sparkling wine from Piedmont it’s quite enough.

At the same time, the production technology that was once changed involves the secondary fermentation process not in bottles, as is done in the classic version, but in an enameled or steel tank.

Secondary fermentation process

It is the process of secondary fermentation that allows carbon dioxide bubbles to appear in the drink, and the method itself is named after its creators - Sharma-Martinotti, or simply Sharma. This technology has gone through several stages of improvement over time, and although this process makes sparkling wine easier and cheaper to produce (compared to classic French champagne), it does not produce complex sparkling wines like brut.

This is partly due to the grape variety from which Martini Asti is made. If classic French champagne mostly requires grape varieties such as Chardonnay or Pinot noir, which are acclimatized to the limestone soils and cool climate of the French province, then Asti champagne retains the aroma of Muscat varieties that ripen easily in the hot sun of Italy.

  • For this reason, French wines of the highest category are almost always classified as dry or ultra-dry, since grapes can accumulate sugar content only in a warm climate.
  • The increase in the cost of Martini Asti is largely explained by its popularity, because, as already mentioned, the production technology is quite economical in comparison with classic bottle technology.
  • There are especially large numbers of followers for Asti wine varieties such as Cinzano, Martini or Mondoro. All of them belong to sparkling wines, differing only in shades of taste.

If in other types of champagne wines it is possible to mix several varieties of grapes, then for the production of Asti only the Muscadello dellicatissimo, or “white Muscat” variety is suitable, which since the times of the Roman centurions was considered one of the most aromatic and suitable for making wine. It is this grape variety that sparkling wine “Asti” owes its natural sweetness and fruity-floral aroma.

It is possible to grow such a vine and obtain a high-quality harvest only if the specific composition of the soil and certain climate conditions inherent in Piedmont are observed.

In addition, the location of the vineyards at a level of 200 to 400 meters above sea level also influences the quality of the raw materials obtained, which means that the result is a wine that is unique in its taste.

It is enough to mention that from grapes from the vineyards of Piedmont, the ones used in wine production, juice is obtained containing 80 grams of sugar per liter of product. Under such conditions, it is not necessary to add sugar to obtain a wine of twelve degrees strength.
However, the production of Asti champagne provides for the completion of fermentation already at the stage of 7% alcohol content in the source material.

  1. Experts say that if fermentation is increased to 12% alcohol, the result will be a completely different, bitter taste that can spoil the final taste of the popular sparkling wine.
  2. After all, one of the advantages of Asti is its recognizable fruity bouquet, and the entire production process is aimed at emphasizing and preserving it.
  3. As a result, the production of such sparkling wine is characterized by the use of only one stage of fermentation, and to prevent the second stage of fermentation from starting, a special variety of yeast is used.

When the desired level of alcohol is reached, the wine is cooled, and subsequently goes through several more stages in this way, including the stage of secondary microfiltration under sterile conditions, and also bottling. At the same time, sugar is not added to the product at any stage of production.

The characteristics of the vine are enhanced depending on climatic factors and soil properties.

The production area is located mainly in the province of Asti and partly in Cuneo and Alessandria. The density of vineyards must be at least 4000 vines/ha, the yield of grapes must be more than 10t/ha.

Preparation of wort

After collection, white muscat is immediately sent to the pressing workshop, where it is turned into wort in large tanks. After filtering from unnecessary impurities, the raw materials are pressed using a soft method called “soffice”. The wort obtained in this way is cooled to low temperatures (just above zero) to avoid the onset of unwanted fermentation.

The next stage in the life cycle of Asti champagne is fermentation.

  • The cooled wort is brought to a temperature of approximately 20 degrees and yeast is added.
  • When the alcohol content reaches 5.5%, the drink enters the stage of fermentation or secondary fermentation.
  • The future sparkling wine ferments in autoclaves - closed vessels under pressure.
  • In them, carbon dioxide (a byproduct of the process) is captured and dissolved in the wine.
  • This is the source of the bubbles in the drink.

This method is called the Martinotti method after its creator. Although outside of Italy it is called the “Asti method”.

  3. Taste. Asti belongs to the category of sweet wines, while champagne has high acidity and is more similar to dry drinks.

It was the scheme for preparing spicy vermouth developed by the talented Italian that allowed the company to reach a new level, gain popularity and fame not only in Italy, but throughout the world.

In 1864, the first export of the legendary vermouth in the company's history took place. Thus, boxes of alcoholic beverages were sent from (Genova) to the USA. Thus, it is the 1860s that is considered to be the time when the brand began to gain worldwide fame.

In 1865, an international exhibition of alcoholic beverages was held in Dublin, as a result of which Martini was awarded the first class medal for Quality. This was followed by a series of equally prestigious exhibitions and presentations in France, Great Britain, Australia and other countries.

In 1878, the export of goods to Russia began. Among the imported goods was not only the legendary Martini vermouth, but also some sparkling wines.

In 1879, after a long illness, the company's chief accountant, Teofilo Sola, passed away, and Luigi Rossi bought his share in production. Another rebranding takes place, and the company receives a new name “MARTINI & ROSSI”.

In 1893, the brand's products finally acquired their legendary, well-recognized label. This happened as follows: the current king of Italy at that time, Umberto I, issued a decree allowing the use of the country’s coat of arms when developing a branded product logo.

From the end of the nineteenth century until the 1990s, the company developed rather statically. The brand had a specific, established customer base, as well as the image of a manufacturer of exclusively high-quality goods. In addition, there was no other alcoholic company on the market of that period that would be able to compete with MARTINI & ROSSI.

However, this situation begins to change somewhat at the end of the twentieth century and in order to strengthen its position on the world stage, the brand’s management decides to merge the enterprise with another large winery - BACARDI. Thus, in 1992, a new label was formed - “BACARDI-MARTINI”.

Currently, the Italian BACARDI-MARTINI wineries produce a whole range of different varieties of the legendary Martini vermouth.

Asti

It is nutmeg that gives the drink that unique tart floral-honey aroma and golden hue. Most people mistakenly assume that Asti is the same as champagne. Of course, these sparkling wines do have a number of common features, but their production technologies differ significantly from each other. Thus, the Asti preparation technology involves a double fermentation process, which must take place in special hermetically sealed steel vats. It is thanks to this that those very gas bubbles form in the drink.

It is noteworthy that the technology for creating Asti wines has been significantly improved by specialists of the Martini brand, and from now on this drink does not undergo double fermentation. Thanks to some secret recipe formula, the formation of gas bubbles can be achieved during the first period of fermentation in sealed containers.

Today production is concentrated in Piemonte in the wine-producing province of Asti ( Asti). In total, the brand owns approximately a third of the global Asti wine market.

In order to experience the full palette of Martini Asti flavors, the drink should be cooled to a temperature of approximately 8-10 degrees Celsius. It should be served in either a wide bowl-shaped champagne glass or a narrow flute-shaped glass.

Rosso

Martini “Rosso” is the very vermouth with which it all began, it has been produced since the distant 1862, and its name is translated into Russian as “red”. Extra Dry

Bianco
