Description

The laziness of this version of whites is that they are prepared not using classic yeast dough, which requires kneading, but using dough for yeast pancakes, which is kneaded much faster, easier and without the slightest effort. What is the result? The taste is almost identical, unfortunately, in appearance, they do not look as smooth and beautiful as classic whites, but if this is not important for you, then why not! Save a lot of time and effort!

From the specified amount of ingredients I got 15 whites.

PREPARATION:

Dissolve the yeast in warm milk. Add salt, sugar, egg. Add flour until the pancake batter becomes thick, i.e. to such a consistency that the dough no longer drips from the spoon, but lazily slides off.

Add vegetable oil, stir and leave in a warm place to rise. The dough should rise approximately 2 times. Usually it takes about 40 minutes for the first rise. Stir the risen dough and let it settle. Cover again and keep warm for a second rise. After the dough has risen a second time, you can start baking the belyashi. Don't stir the dough anymore! For the filling, take any minced meat, add salt and pepper. If the minced meat is too thick, add a little water. As a result, you should get something that is not thick, but not runny either! meat mixture. Form the minced meat into small cakes. Heat vegetable oil in a frying pan. Place a spoonful of dough and smooth it out. If the dough does not slide well, you can wet the spoon in water or vegetable oil.

Place the meat patty on top.

Top with another spoon of dough and spread it so that the meat is completely covered.

Fry covered over low heat until golden brown on both sides.

After all the belyashi are fried, cut one and check the meat for doneness. Usually everything is fine with this, but if it suddenly gets a little damp, cook them in the oven or microwave.

Enjoy your meal!

My family really loves homemade cakes. But one of our favorite dishes is homemade belyashi. The catch is that I really don't like fiddling with dough. After reading a bunch of recipes, I finally found an alternative option for myself - lazy whites for a lazy housewife.

How to decorate and what to serve with

Lazy belyashi are decorated with herbs and served hot with sour cream or any sauce based on sour cream, cream or mayonnaise. A great addition to whites would be a salad of fresh vegetables or a cup of aromatic tea or coffee. You can serve belyashi with broth or soup.

  • To prevent the whites from sticking to the pan, you need to heat it well with sunflower oil. To make sure the oil has reached the desired temperature, dip a small piece of dough into it. If the oil starts to foam and sizzle, it’s time to fry the whites.
  • For frying belyash, you need about enough sunflower oil for the belyash to drown halfway in it.
  • Fry the belyashi over medium heat so that the meat has time to cook and is not raw. If the whites are browned, but the meat inside is still raw, cook them in the oven or microwave.

Cooking options

Belyashi can be prepared with any meat you prefer or whatever you have on hand. You can make minced chicken fillet (as in our recipe), take beef, pork, or make minced pork and beef. It's even easier to buy it ready-made. But this will only be good if you are sure that you are buying high-quality minced meat. If not, then it’s better not to risk it and cook it yourself.

The dough for whites in a frying pan is made as extremely simply as for pancakes. Read about how to prepare tasty and less fatty ones by following this link.

There is also a simple recipe for lazy whites made with yeast. The consistency of the dough for yeast sloths is the same as in our recipe. It turns out tender and airy, but it takes longer to prepare because the yeast dough needs to be risen several times (about 2 times for 40 minutes). But the rest of the cooking principle is the same.

There are several types of lazy whitefish. The first is when the whites look like pancakes with meat, the second is when the sloths look like classic whites. In order to prepare the second option, you need to make small cakes from the minced meat. The dough is poured onto a hot frying pan, like pancakes, and a minced cake is placed on top.

They fry the bottom, then cover the meat with liquid dough on top, giving the product the shape of a classic white meat with a hole. Then turn over and fry on the other side until done.

Did you like the whites according to our recipe? We will be glad to receive your letters with comments, observations and additions. Cook with love.

In a nutshell about cooking lazy whites. Essentially, the dough is kneaded like for pancakes, and minced meat and onions are used as filling. Fried meat pies turn out rosy and filling, and most importantly, very quickly.

Lazy whites are prepared in two ways. You can put a tablespoon of dough into the pan, then place the meat filling in the center and pour the dough on top again. Or you can, to simplify the task even more, immediately mix the dough with minced meat and onions, spoon it into the oil in a frying pan and fry until golden brown - you will get “very lazy whites” with filling inside, or “pancakes with meat topping”. Try both options and choose the best one!

Warm the kefir a little - you can leave it at room temperature for 1 hour or heat it slightly on the stove, but be very careful not to curdle. In the heat, lactic acid bacteria are activated, they extinguish soda more actively, which means our whites will turn out fluffy and soft. I add salt, sugar and soda to warm kefir. I stir and leave for 3-4 minutes until the soda reacts and goes out.

Next, I beat in the egg and lightly beat it with a whisk or fork until it is completely dispersed. And gradually introduce the sifted flour. You should get a homogeneous, bubbling dough with the consistency of pancakes. If it is a bit runny, you can add a little more flour.

All that remains is to prepare the filling. If you grind the minced meat yourself, immediately pass the onions through a meat grinder. If the minced meat is purchased, cut the onion into small cubes and stir into the minced meat.

I added a couple of pinches of salt and ground black pepper to the minced meat and mixed it thoroughly with my hands. And divided the minced meat into portions of about 2 tsp. Flatten it into small round cakes - 2.5-3 cm in diameter. This will be the filling for lazy whites.

Heat up a frying pan with enough vegetable oil (take refined oil so it doesn’t smoke). Then, using a spoon, quickly spread out the dough at some distance from each other. And on each pancake I placed a portion of minced meat.

To cover the filling, I poured another spoonful of dough on top, trying to leave a small hole in the center - by analogy with “proper” belyashi, this way the meat will be better fried.

Baked over medium heat. As soon as it is fried on one side, turn it over to the other and fry until golden brown. To remove excess fat, do not forget to blot the finished products with paper napkins.

This is how kefir-based whites with minced meat turn out - lazy, the filling is inside the dough. As you can see, it’s nothing complicated, you just need a little skill and everything will work out.

2 way to prepare lazy whites

The recipe can be simplified - immediately add the filling to the dough, and then spoon it out and fry it like regular pancakes. The result is a kind of lazy whitefish with minced meat inside; they cook even faster than in the previous case, without unnecessary manipulations. But the taste and appearance will be completely different.

Lazy belyashi should be served immediately after cooking, while still hot (or reheated). Sour cream and herbs will perfectly complement the dish. Have a healthy appetite! 😉
